Originally from Carlow, Mark came to Dingle for a day trip about 12 years ago and never left. Since then, he has become synonymous with food on the Dingle Peninsula. Having worked in good local restaurants and hotels, Mark found he had a passion for teaching and joined IT Tralee as a lecturer in Culinary Arts.
He was instrumental in the setting up of the Dingle Farmers Market and the Dingle Food Trail and has been deeply involved in the development of the hugely successful Dingle Food Festival – where he is currently joint chairperson.
In 2014, Mark opened the Dingle Cookery School, which he sees as a hub for food tourism on the Wild Atlantic Way.
